We are into the second week of curbside PU which is now becoming a standard for many businesses country-wide. Boxes were packed yesterday for the early birds with more replenished as the day progressed. The only shortage at present is BOXES! Volunteers are scrounging for 2 sized boxes during the week. Boxes given out the previous week are not reused: potential contamination is too much of a danger.

The pantry almost always has specific staples as part of its weekly order: peanut butter, cereal, canned protein like tuna and chicken, powdered milk, etc. Variety comes primarily according to Good Shepherd’s current stock. A recent purchase included smoked salmon which makes a great chowdah!

Smoked Salmon Chowder
2 Tbsp. butter
1 diced onion
1 cup diced celery
2 garlic cloves, minced
1-2 small potatoes, cubed
1-2 cups chicken stock
1 cup smoked salmon
1 cup peas
1 tsp. Old Bay Seasoning or dill.
2 cups milk mixed with 2-3 Tbsp flour OR instant mashed potato

Saute’ onions and celery in butter. Add minced garlic and potatoes. Add chicken stock and boil until potatoes are cooked. Add peas, seasonings and salmon. Bring to a boil. Reduce heat and thicken with the milk mixture.
