Although the current model in the pantry has returned to “shop from the shelves”, the hours adopted during curbside service remain the same – 9 AM to 1 PM on Thursdays.

One advantage to having the week-to-week comparison is that weekly fluctuations are more obvious.  Interestingly enough, the big jump in numbers happened last year, too.

Cans of cream soup and pasta (a marriage made in Heaven) have been readily available lately.  Here’s a little twist on a perennial favorite.

Creamy Pasta with Chicken

2 Tablespoons cooling fat of choice
1 pound cubed or ground meat (chicken, turkey, tuna, pork, etc.)
1 can of Cream Soup (chicken, mushroom, celery, etc.)
1/2 cup pesto
1/2 cup milk
8 ounces (3 cups) pasta, cooked and drained
1 cup cherry tomatoes, halved

Add cooking fat to a skillet and heat until the fat easily coats the bottom surface. Brown the meat.  Add soup (undiluted), pesto sauce and milk. Heat to a simmer. Reduce heat to low and simmer ingredients for 5 minutes until meat is cooked through. Stir in pasta and cook until the mixture is  hot.

Remove from heat and stir in cherry tomatoes.  Serve right from the skillet.
