Another hot week! And a recipe that requires no stove. This is yummy served on bread, in pita or wrapped in a crisp lettuce leaf – for a picnic on the porch or on the top of Cadillac Mountain.

Avocado and Chickpea Salad

1 (15 oz.) can of chickpeas, rinsed and drained

1 ripe avocado

2 tsp. Dijon mustard

1 Tbsp. lemon juice

1/2 tsp. salt

1/4 cup diced onion

1/4 cup diced red bell pepper

1/2 cup diced cucumber

2 Tbsp. minced fresh dill or 2 tsps. dried

Mash the chickpeas and avocado together. Stir in the rest of the ingredients and adjust seasonings to your liking. If it is a little dry, add some olive oil 1 Tbsp. at a time until moistened.
