Pineland Farm Cheese has been offered at the Tree of Life pantry every week lately, cheddar, mozzarella and muenster to name a few varieties. Hannaford Supermarkets recently joined Good Shepherd’s cheese donation efforts aimed at addressing hunger relief and helping Maine dairy farmers.

And for an interesting use of cheese, here’s a recipe for a pizza crust using cheese as a base.

Ingredients for 2 or 3 crusts

4 cups shredded mozzarella cheese

4 ounces cream cheese

1 cup coconut flour

4 eggs

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp xanthan gum

1/2 tsp. oregano

1/2 tsp. dried basil

1/4 tsp. dried parsley

1/4 tsp. onion powder

1/2 tsp. garlic powder

1/2 tsp. salt

Preheat oven to 375 degrees. Combine all ingredients in a food processor and process until the cheeses are incorporated into the dough. Alternatively, soften the cheeses a bit in the microwave or oven, add the rest of the ingredients and knead as you would bread until the dough has a consistent texture.

Roll rounds between 2 pieces of parchment paper – 2 large or 3 medium crusts. Transfer on the parchment paper to a cookie sheet or a preheated pizza stone and bake for about 20 minutes or until firm to the touch. Remove the crust with the parchment paper from the oven.

Coat the surface with a little olive oil then add toppings of choice – pizza sauce, veggies, more herbs, meat, etc. Add more grated cheese as a topping then bake 10 minutes more or until cheese is nicely melted. Enjoy!

This crust is easy to pick up with your hands – like regular pizza.
