The Pantry shelves are always stocked with peanut butter – sometimes jelly, too. Here’s a recipe for high protein peanut butter cookies that are quick and easy to bake.
1 cup creamy natural peanut butter
1 egg
1/4 cup + 2 Tbsp sugar (brown or white) or sugar substitute
3/4 tsp. baking soda
1/2 tsp. vanilla extract (optional but delicious if added)
1/4 tsp. salt (optional)
1 cup chocolate chips (are these ever optional?)
Preheat the oven to 350 degrees.  Grease a baking sheet.
Thoroughly mix all ingredients in a mixing bowl.
Scoop dough by tablespoonfuls onto baking sheet.  Slightly flatten with a fork making crisscross marks.
Bake for 8-12 minutes until only slightly brown and firm on the top.  Let these extremely fragile cookies cool on the cookie sheet before removing to a cooling rack.
