Sweet potatoes have been available recently as well as apples galore!
Here a recipe for Sweet Potato Bean Soup
1# sweet potatoes, cut into small cubes
1 apple, cubed
2 scallions or green onions
2 Tbsp. Fresh sage (2 tsp. Dried)
2 ½ cups water
2 cups vegetable or chicken broth
15 oz. can of white beans (cannellini is recommended but most any will do)
Boil the sweet potatoes, water, apples, scallions and sage until the potatoes are soft. Add milk, broth and beans and heat until everything is hot.
Blend with a hand held blender until as smooth as you like. Alternatively, the cooked soup can be mashed until desired consistency.
