With lots of lentils still in stock and hot weather on the way, here’s a recipe for marinated lentil salad with lemon garlic dressing:

1 lemon
1/4 cup olive oil
2 cloves minced garlic
1/2 tablespoon dried oregano or a couple of tablespoon fresh
1/2 tsp salt
black pepper to taste
1 cup dry brown lentils
1/2 cup or so chopped and rinsed and dried fresh parsley
2 cups grape tomatoes, halved
1/4 small red onion finely diced
2 oz. feta cheese

Bring 3 cups water to a boil. Add rinsed lentils and boil until tender – 20 minutes or so. Drain and rinse to cool. Zest the lemon for 1 Tbsp of zest. Juice the lemon for 1/4 cup lemon juice. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt and pepper (freshly ground if possible).

Combine all ingredients and serve or refrigerate to serve later.
